中国菜名翻译大全 最近,国内网站上正在热议如何翻译中餐菜名。2007年2月20日,美国《有线新闻网》(CNN)以―错误的翻译‖(Misinterpreted Translations)为题,介绍了北京市有一些招牌、广告、指示牌以及中国菜名的翻译存在某些莫名其妙,十分可笑,甚至是十分可怕的翻译错误。 尤其是部分中国菜名的翻译更是出了一些笑话。如把童子鸡,翻译成―还没有过性生活的鸡‖ ―Chicken without sexual life‖。北京一家豪华大饭店把―酸菜包‖翻译成―酸性食品‖(Acid food),把―夫妻肺片‖ 直译成―丈夫和妻子的肺切片‖(Husband and wife lung slice)。怎么能够把夫妻的肺切成了片炒菜吃?这个菜名看了令人感到毛骨悚然。 一个国家的烹调,尤其是五花八门的菜名,属于饮食文化。我国是一个具有5000多年文明史,56个民族的大国。全国除了4个大的菜系之外,几乎每个地区又有自己的特色菜肴。所以,我国的饮食文化是世界上最丰富多彩的。 中餐又讲究色、香、味。不仅好看,味道好闻而且吃起来口感也好。这是中餐在世界各地普遍受欢迎的最主要原因之一。我作为外交信使,有幸到过100多个国家旅行。现在,不仅在欧美地区有中餐馆,就连许多非洲国家也出现了中餐馆,有些中餐馆的生意还相当红火。 华人华侨在国外开办的中餐馆里使用的菜肴译名各具特色。虽然不能说十分完美,但是起码没有闹出像北京地区这样的笑话。 餐馆里备菜单,目的是为了便于顾客点菜。现在,许多大餐馆为了使顾客对菜肴的内容一目了然,往往在菜单上配有彩色图片。而把中文菜名译成外文,主要目的是便于外国顾客了解菜肴的内容,以利于他们选择自己喜欢的食品。

对于把肉炒嫩,去超市里买一瓶“嫩肉粉”就成了我现在用的是“味好美”的“嫩肉粉” 对于炖排骨汤,先用开水把生排骨过一下,用专门煲汤的锅做 至于白萝卜,要削皮,切成大圆块,在炖排骨1个半小时后再放进去 吃鱼要讲究方法 1.去除鱼土腥味:新鲜鱼放在盐水里洗可除去腥味。在烹任时加入适量的酒或醋,去腥又能增加鱼的香味。 2.鱼没烧透不能吃:鲜鱼特别是淡水鱼常有寄生虫寄生,以鱼头和鱼肉内寄生的最多。如常见的中华支睾吸虫、异形吸虫等。经常吃未经煮熟的鱼或生鱼,容易患寄生虫病。 3.鲤鱼应去腥筋:鲤鱼体内两侧有两道白线样的筋,腥臊味极重,按中医说,它特别不适宜于某些热性病人食用。因此,刮鳞去鳃后要先除去白筋,再开膛。 4.做鱼切忌先放姜:过早放入生姜,鱼体浸出液中的蛋白质会阻碍生姜的除腥作用。如果等到鱼中的蛋白质凝固了再添加生姜,就可达到彻底去腥的目的。因此,先把鱼烹煮一会再放姜,去腥效果特别好。 5.宰杀活鱼别忘放血:鲜活鱼只有放了血再烹调,吃起来才鲜嫩、不腥。放血方法是在鱼鳃下横拉一刀,血就放出来了。 6.怎样去除带鱼鳞:带鱼鳞是软软的、粘粘的,除鳞时,把带鱼放入80℃左右的水中,浸泡10秒钟,然后立即放人冷水中,再用刷子刷,或用手捋一下就可以了。 几个要点: 1、鱼要新鲜,但凡不是活杀的新鲜鱼,清蒸都不会太好吃。如果是河鱼,买回来以后,最好用冰水养至少2个小时,这样鱼肉比较紧,口感也比较鲜甜。能养一晚上就更好。

2、品种要好,除了常吃的皖鱼(草鱼),最好用鲈鱼、桂鱼这样价格不贵、肉质好、味道鲜、鱼刺少的。 3、要耐心收拾,鱼鳃和肚子里面的黑膜一定要去得很干净,肚子和鱼嘴也要洗干净。 所有的河鱼都要把神经线去掉--腮下一指切开,里面能看到一根白线,抽掉。 4、蒸鱼的时候地下最好铺一层大葱段,旺火旺气蒸8分钟足够了。蒸好以后把葱段和蒸出来的水都不要,因为会很腥。 5、在蒸好的鱼身上撒上一小撮姜末和2把葱丝,浇上调料汁--用鱼露+白糖+少许黑胡椒碎在一起充分融化,再浇上1勺热的花生油,味道会很好。 炖汤不算很难的事情,我个人的经验是: 原料越简单越好,但是质量必须高。 调料品种越少越好,但是每一种都要放得准确,实在不好把握,宁可少一点。 放水要一次性放,千万别中途加水。 看看你炖汤的过程,有些教训需要好好吸取: 1、好汤那些鲜美的滋味主要来自于肉,所以炖汤还是肉多的原料炖出来鲜美,骨头再怎么炖也不可能很好的。所以售货员推荐腔骨本身就有问题,很多人用骨头来炖汤并非是它炖汤多么好喝,而是因为炖出来没有那么油腻。 2、排骨类飞水的过程应该彻底烧透,让血水都煮出来,之后不应该用凉水冲洗,而是应该先撇干净血沫,然后把排骨一根根捞出来,趁热加足水接着煮,一旦你洗过了,味道就差很多。 3、炖肉汤加醋是非常不好的,料酒也不好,放一点点花雕就足够了。 4、为了肉汤好喝,应该始终保持旺火滚开状态,这样熬出来的肉汤才会汤色发白而且浓郁好喝。
